Rheological Properties of Gums Extracted from Detarium microcarpum and Colocasia esculenta in Comparism with a Standard: Gum Arabic

Abstract
Gums were extracted and purified from Colocasia esculenta and Detarium microcarpum.Rheological properties of
these gums in comparism with a standard,Gum Arabic were determined.Result showed that gums from D.microcarpum
(0.0113cps) and C.esculenta (0.0110cps) exhibited Newtonian characteristics and had higher apparent viscosity than Gum
Arabic (0.0109cps).These gums exhibited shear thickening characteristics when apparent viscosity was plotted against shear
rate.Density values for extracted gums were observed to increase with increase in gum concentration.The density result for
Gum Arabic ranged from 0.9946-1.004kg/m3,Detarium microcarpum gum ranged from 0.9960-1.035kg/m3 and Colocasia
esculenta gum ranged from 0.9960-1.025kg/m3.
